Abstract

The inhabitants of rural communities seek to improve their living conditions, through activities that are alternative to traditional ones, which allow them to add value to local products, to guarantee income that allows the survival of their families. This is the case of the production of tlacoyos in the community of San Miguel Tianguizolco, municipality of Huejotzingo, state of Puebla, Mexico, where women have been engaged in this activity for more than 30 years. This research aims to describe the process of production of tlacoyo in this locality, trying to identify opportunities for improvement in each stage. The results indicate that the production of tlacoyo is done in a traditional way that has allowed its permanence in the market, however, there is an opportunity to streamline the process with the implementation of improvements in the design of spaces, infrastructure and quality practices .
