Abstract

Yucca (Manihot esculenta Crantz) is a tropical species, and it is an important tuber at the global level. This species has been exploited primarily in fresh form; however, the current added value is very low. A feasibility study was carried out to elaborate cookies from yucca in Escárcega, Campeche, México. It was determined that the number of the economically active population in the city of Escárcega is 14,385, and n=300 of surveys was calculated, validated according to Crombach’s Alfa whose calculated value was 0.679, indicating that this instrument had an acceptable degree of reliability and validating its use for data collection. The results showed an acceptance of the cookies based on yucca and their generalities, of 83 %, attributed to the original consumption of the tuber, arguing that it is healthy, nutritious and pleasant.
