Abstract

Objective: This article analyzes the cheese production value chain in the municipality of Aculco, State of Mexico, using a mixed approach that combines the general guide for value chain development proposed by Nutz and Sievers with Michael Porter’s business strategy framework.


Design/methodology/approach: The integration of these two approaches allows for a systemic analysis that incorporates both social and business perspectives. The study identifies the main actors, relationships, and bottlenecks along the chain, highlighting the processes that add value and determine competitiveness in the local context.


Results: The cheese value chain in Aculco exhibits strong artisanal specialization, cultural significance, and a notable contribution to local development. However, it faces challenges such as limited coordination among producers, low innovation capacity, and vulnerability to external economic and political factors.


Limitations/implications: The study focuses on a specific municipality; therefore, the results should be interpreted within this territorial scope. Nevertheless, it provides a methodological reference for analyzing other agri-food systems with similar characteristics.


Conclusions: Strengthening organizational and managerial capacities, promoting territorial integration, and encouraging sustainable practices are necessary to enable producers to anticipate strategic scenarios and adapt to changes in markets and public policies.
